If you are new to this blog, I have to explain that I love baking and will occasionally write personal posts on my baking and what I get up to when I get some down time. I honestly think that as soon as I saw the first fat, fluffy snowflake, my mind went straight to a really moist, sweet carrot cake with creamy, cream cheese icing.
The recipe I used actually calls for pineapple. Bizarre? But yummy. The pineapple adds moisture to the cake in our dry climate.
Mmm…golden brown cake with generous cream cheese icing. My tip? I never use the amount of icing sugar that the recipe states. I add heaping spoonfuls of sugar at a time and just work based on taste. I like my cream cheese icing to be more cream cheese-y.
This cake is a perfect comfort dessert to get through this dreary weather and a nice break for me to recharge my creative juices. Try the recipe out for yourself!
