To celebrate my friend Chelsea’s upcoming intimate wedding in Las Vegas, a group of us ladies decided to head to Banff, Alberta (a world-reknown national park only an hour and a half outside of Calgary!) to celebrate. I was put in charge of desserts, and with the pressure on, I knew I had to make something really fabulous. However, at this point, all I really knew was that I wanted to make sugar cookies, because buttercream cupcakes are dangerous to keep in the car all day before we checked into our hotel, and I wanted the cookies to relate to Las Vegas.
After looking around the Internet and seeing mostly playing card cookies and poker chip cookies, I was a little frustrated because nothing seemed personal enough. I really wanted these cookies to be unique to this specific wedding and how the couple chose to declare their love and committment to each other. I was inspired by one set of cookies I found on Google that used sparkly-looking sprinkles, so I typed in “Las Vegas lights” into the search engine and one of the first photos that came up was of Paris hotel’s Mongolfier balloon’s glittering lights:
It was destiny, I decided, because Chelsea’s wedding will be held at the Paris: I was meant to make Paris balloon cookies with glittering sprinkles (these lights went on to create the stagette theme of “Las Vegas lights”, with us wearing sparkly and sequined clothing and accessories!).
I set to work and drew a sketch, simplifying the balloon a bit so I could recreate the design in icing:

I was quite proud of how these cookies turned out, and thankfully, the girls (and Chelsea’s hubby-to-be) loved them! I really love making my designs very personal for wedding couples (and other special occasions, naturally) so thank you, ladies, for giving me a time to shine and letting me create something unique and custom-tailored to a union of two wonderful people.
