So, I know I’m supposed to have an etiquette post today, but I have got my baking on right now (for fun and for a project) so today’s regularly scheduled etiquette post is being replaced by a delicious food post instead — okay? Okay.
I received Martha Stewart’s Cupcake book as a birthday gift last year but haven’t really had the time to try the more interesting cupcake recipes. But with the weather taking a turn and temperatures dipping in Calgary, I got that itch to bake again!
I’m an avid fan of Oreo cookies (Oreo Blizzards are my favourite!) and these Oreo cheesecake cupcakes looked too good not to make. This recipe is pretty simple, but definitely not for the calorie-conscious…FYI, it takes 4 blocks of cream cheese to make these babies. These cupcakes are extremely rich but soooooo delicious!
Start with Oreos…
…and place one at the bottom of each cupcake liner. (My apologies for the weird colouring in these few photos — my camera was on the wrong setting and I didn’t figure it out until a few photos later).
And then you take some cream cheese and whip it into submission until it’s smooth and creamy!
Crush some Oreos (and by “some”, I mean “a lot” — I’m the kind of person that gets a double helping of Oreo crumbs in my Blizzards) and mix it into the whipped cream cheese…
Ah, these photos are better! Scoop the Oreo cheesecake batter on top of the Oreo cookie in each cupcake liner…
Pop them into the oven…et voila!
Yum, yum, yum!
